Rolled fondant should never be stored in the freezer. Rolled fondant should also not be kept in the refrigerator or chilled.
Quick-pour fondant can be stored in the refrigerator for 2 to 3 weeks. To reuse this type of fondant, it simply needs to be heated. Too much light can alter the colors of fondant icing, so it should be kept in covered containers that block out light. Fondant has the tendency to dry out very quickly. Keeping it covered in plastic wrap helps prevent it from drying out. Adding powdered sugar can help address the issue of stickiness when rolling fondant.
