Fruit can be dried in a variety of different ways, including in convection ovens, and since a turbo oven is a type of a convection oven, it can be used to dehydrate fruit successfully. However, fruit needs to be carefully prepared before drying.
Pipes and cores should be removed, and fruit sliced to the required thickness. Fruits such as apples should be treated by dipping rings in water and lemon juice before drying. Prepared fruit pieces should then be placed on a tray in a single layer without touching. The ideal temperature for drying fruit is 170 F, and the fruit should be checked regularly to ensure even processing.
