Carrots that have gone bad typically feel slimy and mushy. Carrots that are mushy or slimy must be discarded and not eaten. Bad carrots also tend to have small white dots on them; however, carrots with white dots are still fine to eat.
The best way to keep carrots fresh is by placing them unpeeled in a plastic bag and keeping them in the refrigerator. Baby carrots can be separated into individual, zip-lock plastic bags and stored in the vegetable drawer of the refrigerator. Generally, carrots last up to a month when stored in the refrigerator. Another way to prevent carrots from going bad is by blanching them and storing them in the freezer.
