Carrots contain vitamin A, which is a nutrient that can benefit the eyes, according to All About Vision. Vitamin A is a group of antioxidants that can help to protect the cornea, or surface of the eye. Without vitamin A, the photoreceptors' outer segments can begin to deteriorate, which can also alter vision, notes Duke Medicine.
Vitamin A isn't found only in carrots. It is also found in the form of provitamin A carotenoids in sweet potatoes, cantaloupe, kale and spinach. It is found in the form of retinol vitamin A in whole milk, cheese, chicken liver and beef. Eating a variety of these foods can help encourage healthy vision.
