Cheese has a low-glycemic index and has minimal impact on a diabetic person's blood sugar levels. A 2003 study published in the American Journal of Clinical Nutrition showed that people who eat cheese have a 12 percent lower risk of developing Type 2 diabetes.
A high-protein diet that includes low-fat cheeses lowers postprandial blood sugar levels and improves overall blood sugar control. Other foods recommended by the American Diabetes Association to control blood sugar levels include dark green leafy vegetables, beans, berries and fish high in omega-3 fatty acids. Plant based proteins provide healthy fats and fiber to stabilize blood sugar levels.
