According to Bon Appetit, chestnuts are in season in December, just in time for the holiday season. Chestnuts have a buttery, meaty flavor that is even more palatable when they are roasted.
To get the best chestnuts, choose ones that seem heavy for their size and have a tight skin. Avoid ones that are moldy or rattle in their shells. Chestnuts can be stored in the refrigerator for a few days before use, but if they are being roasted, they should be taken out about 24 hours beforehand. Chestnuts are desirable by themselves but also add flavor and texture to waffles, salads and stuffing.
