As a substitute for use in recipes, simple syrup made of 1 cup sugar dissolved in 1/4 cup hot water can be used to replace 1 cup of light corn syrup. Alternatively, a direct equivalent of honey also serves well.
Corn syrup tends to spike blood sugar and does not contain much nutritional benefit. More healthy alternatives are maple syrup, honey and agave syrup. Maple syrup contains several minerals, such as calcium, iron and zinc. Honey contains scant amounts of protein, vitamins and minerals. Agave syrup has little nutritional value, however it is sweeter than corn syrup and has an extremely low glycemic index.
