Seed potatoes should be planted eye-side up in a 4-inch deep trench approximately one foot apart. The best time to plant seed potatoes is within two weeks of the last spring frost.
Potatoes should be planted in a well-drained area with loose soil. They need constant moisture to survive. Most potatoes are ready to harvest approximately 10 weeks after planting. The Farmer's Almanac suggests that the potatoes should be harvested on a dry day and dug up gently. Potatoes may rot if they are not harvested by the time the vine dies. This tends to happen in the month of August.
