Tabasco peppers grow to be 1/2 inch wide by 2 inches long, so they fit into relatively small jars. Another option for tabasco pepper storage is a loosely closed plastic bag. Remove all moisture from the peppers before storing, as water causes the peppers to spoil.
When harvesting the peppers to store in jars, do not remove the stem. Removing the stem creates an open wound that often spoils the pepper. Instead, use pruning shears or a sharp knife to cut a short stub of a stem with the pepper when removing from the pepper plant. Harvest tabasco peppers when they ripen or just before, and allow the pepper to finish ripening indoors.
