Maltodextrin is a natural, yet highly processed, food additive that comes from plants such as corn and potatoes, explains Healthline. The Food and Drug Administration regards maltodextrin as a safe food additive; however, because it affects blood sugar levels, it is potentially unsafe for persons with diabetes. The additive is found in many foods, including canned fruit, salad dressing, puddings and sauces. Individuals with diabetes should speak with a doctor about the potential risks of consuming maltodextrin.
