Eggs as well as some cheeses, such as Cheddar and Swiss, are low in potassium. Cereals and breads are often low in potassium as well. Pork is a low-potassium meat. Draining canned vegetables prior to use removes excess potassium. Soaking vegetables for two hours as well as peeling the skins can further reduce potassium content.
