To freeze apricots, make a simple syrup by combining 6 cups of water with 2 cups of sugar over medium heat until the sugar dissolves. Clean, peel and slice the apricots, then combine with simple syrup and two tablespoons of lemon juice. Store in the freezer in airtight bags.

Combine 6 cups of water with 2 cups of sugar in a stock pot over medium heat. Stir the sugar with a wire whisk until the sugar dissolves. Let the syrup cool.

Wash the apricots under cold water. Fill another stock pot with water and bring to a rolling boil. Place apricots in the water with a slotted spoon for 45 seconds. Remove the apricots from the boiling water and allow them to cool. Use a paring knife to remove the skin from the apricots. Slice apricots into quarters or wedges.
