How do you freeze sugar snap peas?

To freeze sugar snap peas, blanch the peas for 1 to 2 minutes, then chill them in ice water, drain on a towel, place in a single layer onto a pan and freeze until solid. Place peas in a moisture-proof container and return to the freezer.

1. Blanch the peas

   Bring 1 gallon of water to a boil. Put up to 1 pound of the same sized peas into the boiling water. Blanch small peas for 60 to 90 seconds and medium peas for 2 minutes.

2. Chill the peas, and drain

   Immediately place the peas into ice water until chilled. Drain peas in a single layer on a towel.

3. Freeze the peas

   Place a single layer of the peas onto a tray, and place them in the freezer until frozen solid. Put the frozen peas into a moisture-proof container, and return to the freezer.
