This recipe takes several hours and a number of different cooking processes to prepare, but each process is easy. It yields 2 servings.

Ingredients:
- 2 pounds pork belly, cut into 6-inch square pieces
- 1 gallon vegetable oil
- 1/2 cup diced onions
- 1/2 cup diced tomatoes
- 1 tablespoon fish sauce
- 1/2 teaspoon Hawaiian salt
- 2 tablespoons chopped green onions
- Boil the pork
- Strain the pork
- Fry the pork
- Toss the pork and serve
Place the pork belly in a large pot and cover with water. Bring to a boil and cook on high for about 1 hour and 30 minutes, or until the pork belly is tender.
Place the pork belly in a strainer and allow to drain for 30 minutes, or until all the water has been removed.
Fill a deep fryer with the vegetable oil and heat on a medium-high setting. Add the pork belly and fry for up to 45 minutes, or until golden brown. Remove from the oil and allow to drain.
Chop the pork into small pieces, around 1/2 inch squared. Toss with the onions, tomatoes, fish sauce and Hawaiian salt, then serve with the green onion garnish.
