Tarragon, thyme and savory are all good substitutes for dried rosemary. In a pinch, sage is also a good replacement. For fresh rosemary, oregano or basil make good substitutes.
Rosemary is a popular herb used to flavor meats or to add a distinct flavor to a thick sauce. It is native to the Mediterranean region, which is why it tends to show up so often in culinary recipes from that area and into Europe. For something different, rosemary lovers strip rosemary stems of their needles and use the stems as a convenient skewer for meat or vegetable kebabs. This adds a bit of extra rosemary flavor to the kebabs.
