Are green peppers just unripe red peppers?

Green bell peppers are a less mature equivalent of red bell peppers. Bell peppers, whether they are red, yellow, orange or green, all come from the same family of vegetables.

Although green bell peppers are less mature varieties of red bell peppers, some varieties of peppers, such as the Staygreen or Permagreen varieties, are green when they are fully ripened. Green peppers are generally less sweet and more bitter than red peppers; therefore, they are often used for different purposes in recipes and cooking. Both green and red peppers are rich in para-coumaric acid, but red peppers contain more vitamins and nutrients and also contain the antioxidant lycopene.
