Harvest horseradish in fall, winter and spring. Loosen the soil in a wide circle around the plant, and then use your fingers to locate the direction in which the taproot has grown. Follow the root with a digging fork, and gently remove the surrounding soil before pulling up the root.
Harvest horseradish several times each year, once in mid-fall and once just before the ground starts to freeze, and once when the ground thaws in the spring.
Horseradish is a hardy perennial distantly related to cabbage. Purchase horseradish roots from a nursery or produce market and plant in fall or late winter. The plants sprout leaves in spring and are ready for harvest after one or two seasons of undisturbed growth.
