Hog maws are the stomach linings of the pig. Hog maws are used most often in soul food, Latin, Irish, Chinese and Pennsylvania Dutch recipes.
Hog maw is a lean meat that can be eaten in a variety of ways, including being boiled, baked or fried, or combined with other ingredients in a stew. In both Pennsylvania Dutch and Southern traditions in the United States, hog maw dishes are included in a New Years Day meal to ensure good luck during the coming year. In Latin American cuisine, hog maws are fried with other parts of the pig for use in tacos and blood sausage.
