Eating kale may help prevent gout because it contains nutrients, including beta carotene and vitamin C, that are beneficial for joints, according to the WebMD. Other dark, leafy greens, such as collard greens, are also good for preventing gout.
Gout is a type of arthritis caused by the accumulation of uric acid, which is produced when the body breaks down purine, which occurs naturally in the body and certain foods, explains Mayo Clinic. To prevent gout, people should reduce intake of foods with high levels of purine, such as organ meats, seafood and alcohol, and increase intake of foods that assist in controlling uric acid levels. Kale is rich in vitamin C, a nutrient that lowers uric acid levels.
