Leaf lard is not available at Whole Foods, and it can be difficult to acquire. Small butcher shops may sell leaf lard. Alternatively, it can be made at home from pork fat by simmering it in boiling water or cooking it in a stove or oven until the fat melts.

Leaf lard is made out of the visceral fat found near the kidneys and loin of a pig and is the highest grade of fat. It is very soft and spreadable at room temperature and has a mild flavor and high moisture content, making it particularly useful in pastry baking.
