Uncut spaghetti squash can be stored for a month or longer as long as it is kept in a cool, dry environment. Once spaghetti squash is cut, it keeps for two days in the refrigerator.
It is also possible to freeze cut spaghetti squash, but it must be partially thawed before using and re-steamed so that it is tender yet firm. Refrigerated cooked spaghetti squash keeps for five to seven days.
Spaghetti squash is a winter squash that is prepared by baking, boiling, microwaving or slow cooking. Once it is cooked and cooled, the seeds are removed and the pulp is scooped out in its characteristic "strings" that look similar to spaghetti.
