Fresh eggs are considered edible up to 5 weeks past the date listed on the carton as long as they are kept refrigerated at 45 degrees Fahrenheit or lower and are unprepared. The date on a carton of eggs is when the eggs were packaged in the carton.
Most egg cartons also have an expiration date, but it is not required that they have one. The expiration date on a egg carton does not mean they are not still OK to eat. It simply means the grocery store cannot sell the eggs after that date has passed.
