Shiitake mushrooms can be harvested every two weeks over a three-month growing season. Harvested mushrooms should be sealed in a paper bag that is stored in the refrigerator. Most mushroom varieties stay fresh for up to seven days, although shiitake mushrooms last up to two weeks in the refrigerator.
