Once a package of salami is opened, it is likely to last one week fewer in the refrigerator than it would if it remained closed. When salami is frozen, it can last for two to three months after the printed sell-by date. Whether the salami is opened or unopened does not matter if it is kept frozen. Salami lasts longer than most other packaged deli meats.
