How do you make a po' boy sandwich?

To make a classic po' boy sandwich, gather 1 1/2 pounds of shrimp, 2 small loaves of French bread, 1 1/2 cups of flour, 1/4 cup of mayonnaise and 1 1/2 cups of cornmeal. Also prepare 1 1/2 teaspoons of salt, 4 tablespoons of melted butter, 3/4 teaspoons of Cayenne pepper, 1 cup of shredded lettuce and 1 sliced beefsteak tomato. Fry the shrimp, and arrange them on the sliced bread with condiments and sides.
After peeling and deveining the shrimp, season them with 1/2 teaspoon of the salt and 1/4 teaspoon of the Cayenne. If desired, also season them with a commercial Cajun seasoning, such as Emeril's "Essence." Combine the cornmeal, flour and remaining salt and Cayenne into a mixing bowl, combine, and heat some vegetable oil in a large skillet. Dredge the shrimp in the cornmeal mixture until each is completely covered, add them to the oil, and fry them in batches until fully cooked and golden in color.
Transfer the finished shrimp to a plate lined with paper towels so that excess fat drains away. Split the French bread loaves in half and brush each interior side with the melted butter followed by the mayonnaise. Apportion the shrimp equally between each sandwich, add the shredded lettuce and tomato slices, and garnish further with sliced pickles and hot sauce, if desired. Potato chips are a suitable side.
