A single, medium-sized sweet potato that weighs 4 ounces contains approximately 20 grams of carbohydrates. Sweet potatoes are rich in vitamins A and C and are good sources of manganese and beta-carotene.

Sweet potatoes are large, thick, tube-like root vegetables that are only distantly related to the normal potato. In addition to vitamins A and C, sweet potatoes contain vitamin B6 and potassium. They are also decent sources of copper and fiber.
