One sweet potato has about 24 grams of carbohydrates. Most doctors agree that 15 grams of carbohydrates is a serving, so one sweet potato provides a little less than two servings of carbohydrates, depending on its size.
Sweet potatoes do have significant health benefits. For instance, one sweet potato has 4 grams of fiber if the consumer eats the skin. It also has vitamins A, C and B6, as well as potassium, magnesium, manganese and calcium, all of which are important to a healthy diet. A sweet potato does not have a significant amount of protein, as it only contains about 2 grams.
