Are potatoes carbohydrates?

There are 63 grams of carbohydrates in one large russet potato. A large sweet potato supplies about 37 grams of carbs. Both types also offer significant amounts of vitamin C and fiber and contain no fat.

Carbohydrates from plain potatoes are digested and absorbed into the bloodstream more quickly than many other carb-loaded foods. This means that they are a relatively quick energy source. However, when potatoes are combined with foods containing fat or protein, the carbohydrates are absorbed more slowly. The body is not supplied with energy as soon, but the duration is longer. Eating just the flesh -- not the skin -- of a potato does not reduce its nutritional content significantly, except for the amount of fiber.
