The number of vegetables that will fit into a Crock-Pot depends upon the Crock-Pot's size. Slow cookers range from as small as one quart to as large as seven quarts.

In the United States, vegetables are typically measured by the pound. Because a pound is a measure of weight and a quart is a unit of volume, quarts must be converted to ounces. One quart is equal to 37 ounces. Sixteen ounces equal a pound. Therefore, a one-quart slow cooker will hold a little more than two pounds of vegetables. A seven-quart slow cooker will hold about 16 pounds of vegetables.
