Miso paste is a traditional Japanese condiment sometimes used in salad dressing, stir-fry recipes, pasta sauce, burgers, glaze, dipping sauce, poultry rub and even apple cobbler. There are three different kinds of miso paste: white (shiromiso), red (akamiso) and mixed miso (awasemiso).
The types of miso paste vary in flavor due to their different fermentation and aging times. All types of miso paste contain soy beans, water, the fungus Aspergillus oryzae, and rice or barley created from fermented salt. The paste contains several vitamins and minerals in addition to a high amount of protein, making it a nutritious addition that compliments a wide variety of foods..
