What months are crawfish in season?

Crawfish are in season January through June, depending on the weather. Crawfish, known as mudbugs in Louisiana, burrow in silt to lay eggs during the coldest months. They come up when the water temperature tops 50 degrees Fahrenheit.

Crawfish traditionally are boiled along with potatoes and ears of corn. A crawfish boil using a large outdoor cooker is a favorite party theme when mudbugs are in season. A serving size of 3 pounds of crawfish per person is recommended if side dishes also are included. While fresh crawfish are available only about half the year, frozen crawfish usually are available year-round.
