Muscovado is slightly more coarse with a stickier texture than other brown and white sugars, and it has a more complex flavor profile. While it can be substituted in any recipe that calls for brown sugar, its flavor also lends itself well to savory dishes, such as barbecue sauce. Muscovado is produced in Mauritius and the Philippines.
