What is turbinado sugar?

Commonly referred to as raw sugar, turbinado sugar is a crystallized form of pure cane juice extract that contains some molasses. Turbinado is often substituted with brown sugar.
Turbinado sugar appears as small, golden crystals and is commonly used as a topping on baked goods. In order to prepare turbinado sugar, cane juice is spun in a turbine to remove the molasses; hence, the name, turbinado. When turbinado sugar is sold in this basic form, it is considered raw and pure.
Common brand names for turbinado sugar include Sugar in the Raw and Wholesome Sweeteners. Turbinado sugar is often processed further to create refined white sugar.
