The compound NaC2H3O2, which is commonly called sodium acetate, is soluble in water. At 32 degrees Fahrenheit, 100 milliliters of water dissolve 119 grams of sodium acetate. At 212 degrees Fahrenheit, the same amount of water dissolves approximately 170 grams of sodium acetate.
Sodium acetate is a white or colorless compound with no odor and a slight solubility in alcohol. A sodium salt of acetic acid, this compound forms when acetic acid participates in a reaction of neutralization with sodium carbonate.
Most other salts formed with the acetate anion are soluble in water. The only insoluble salt of acetic acid is beryllium acetate, a compound with the chemical formula Be(CH3COO)2.
