What are persimmons?

Persimmons are a type of fruit that are red-brown or orange in color and grow on trees. These fruits look similar to a tomato and originally come from Japan and China. Hachiya and Fuyu persimmons are the most common varieties available.

For a quick recipe using persimmons, make a persimmon and goat cheese salad. First, add a diced persimmon, a diced apple and 1/2 cup crumbled goat cheese to 6 cups mixed greens. Make the dressing by whisking together 4 tablespoons tangerine juice, 2 tablespoons olive oil, 1/2 teaspoon Dijon mustard, and salt and pepper to taste. Add the dressing to the greens mixture, and top the salad with 3 tablespoons of chopped, toasted almonds.
