Generally, onions are available to harvest at any point during the growing season, once the leaves of the plant begin to flop over. It is recommended to leave the bulb in the ground to mature for up to two weeks after the leaves die off.
After the bulbs are dug up, they need to be dried and then cured. Drying involves laying out the bulbs in full hot sunlight to kill the roots. After drying, the bulbs should be cured. Lay them out in full sunlight again, but cover them with a thin cotton sheet to prevent sunburn. Leave them out for two to three weeks, turning them every few days to dry all moisture out of the bulbs.
