When do you pick white eggplant?

Pick white eggplant when the white fruit's skin is glossy. Ripe fruits have soft, well-formed immature seeds. Underripe fruit has no visible seeds, and hard, dark seeds are a sign of an overripe fruit.

Eggplant fruits that are picked when they are underripe or overripe have a bitter taste. Harvest the white eggplant when it is ripe by using pruning shears to cut the short stem. Then rinse the eggplant, pat it dry and use it immediately. It stays good in or out of the refrigerator for several days. Once the eggplant is cut open, it discolors rapidly. Adding vinegar or lemon juice to the eggplant once it is open helps keep it from darkening.
