A large, baked russet potato contains about 8 grams of protein, while other types of potatoes of a similar size contain 6 or 7 grams of protein. This is approximately equivalent to the protein provided by a serving of cheddar cheese.
As is the case with other plant foods, potatoes are an incomplete protein. This means that, while they provide all nine amino acids, potatoes do not contain enough of each amino acid to be considered a complete protein.
A large, baked russet potato also provides about 290 calories and 64 grams of carbohydrates. In addition, potatoes are a source of magnesium, potassium, folate, vitamin C and vitamin B6.
