What is the primary gustatory cortex?

The primary gustatory cortex is a brain structure whose function is taste perception. The neurons in the gustatory cortex respond to the four tastes of sweet, sour, bitter and salty, and then this cortex determines the intensity of the flavors.

The location of the gustatory cortex depends on the species and how taste in that particular species is detected. In primates, it includes parts of the cerebral cortex that include the anterior insula and the frontal operculum, so the term "anterior insula/frontal operculum" is another name for it. In rats and mice, the gustatory cortex is related to the dysgranular insula.
