All types of rice are high in carbohydrates. Most of its carbohydrate content is starch, but rice also contains small amounts of sugar and dietary fiber.
While all varieties of rice are predominantly made up of carbohydrates, the balance of starch and sugar to fiber varies in different types. White rice is lower in fiber than brown rice due to the absence of the fiber-rich hull. Red rice and black rice contain antioxidants not found in white or brown rice.
Despite its name, American wild rice is not a variety of traditional rice. Wild rice is lower in carbohydrates and higher in protein than other types of rice.
