Should you precook chicken before you grill it?

With a hot enough heat source and proper technique, it isn't necessary to precook chicken before grilling it. At 375 to 450 degrees Fahrenheit, a pounded-thin chicken breast cooks through in a few minutes per side without precooking. For more even heat, grill with the lid closed.
Using a meat thermometer helps ensure that the meat is a safe temperature before serving. Chicken breasts should reach 170 degrees Fahrenheit in the center. A whole chicken should reach 180 degrees. The addition of seasonings or basting liquids should be done after the meat is cooked to a safe temperature, since sugars and other additives in the seasoning char quickly when exposed to the heat of the grill.
