Ingredients:

• 1 stick of unsalted butter
• 1 cup water
• 1/2 tsp. salt
• 1 cup flour
• 4 eggs
• 1 1/2 tsp. dry mustard powder
• 1/4 tsp. cayenne pepper
• 1 1/2 cups Cheddar cheese, shredded

1. Cover two baking sheets with parchment paper and turn on the oven to 375 F.
2. Take out four eggs and let them sit out until they reach room temperature. Grate the cheese.
3. Mix the water, butter and salt together in a medium saucepan. Bring the mixture to a boil then remove from the heat.
4. Add the flour to the butter and water mixture. Stir the mixture with a wooden spoon until a soft dough forms. Let the dough sit for 5 minutes.
5. Mix one egg at a time into the dough with the wooden spoon.
6. Stir in all remaining ingredients.
7. Use two spoons to add lumps of dough to the baking sheet in 1-inch heaps, leaving space between each puff. Bake the puffs for 25 minutes.
