Soy milk is not dairy, as dairy refers to milk and milk products that are produced by an animal. Soy milk is a plant milk produced by soaking and grinding soybeans. It is defined as a stable emulsion of water with protein and oil from the legume.
Other plant milks come from sources, such as rice, almonds, coconut and hemp. These milk-like drinks allow lactose-intolerant individuals to consume a beverage with a protein content similar to dairy milk. Plant milks, however, are generally deficient in calcium, while dairy provides a large percentage of the daily recommended value. Plant milks are usually fortified with the mineral in post-production.
