Honey is sweeter than sugar, so use ¾ cup of honey per one cup of sugar. If the amount used is ½ cup or less, it is acceptable to use equal amounts of honey and sugar.
Because honey is a liquid, the amount of other liquids in the recipe should be decreased by ¼ cup per one cup of honey used. If the recipe is for baked goods, add ½ teaspoon of baking soda or cream of tartar to neutralize the extra acidity of the honey. Also, decrease the oven temperature by 25 degrees Fahrenheit to prevent over-browning. Different types of honey have different flavors, so experiment with honey substitution to find a brand that works well.
