What is swai?

Swai is the common market name for the meat of the iridescent shark, a species of shark catfish native to Southeast Asia. Iridescent sharks are cultivated for food in their native countries but are endangered in the wild.

Iridescent sharks can reach up to 4 feet in length. Juveniles are often sold for aquariums but are difficult to keep; they require tanks at least 40 feet long for normal development. Commercially farmed swai is inexpensive, with white meat and a mild flavor. It can be baked, grilled or fried. Served plain, it contains 90 calories and 4 grams of fat in a 3.5-ounce serving.
