What is a swai fillet?

A swai fillet is a portion of a type of shark catfish that has had the bones removed for cooking purposes. Swai is a less costly alternative to fish like salmon and halibut.
Swai is a freshwater fish native to Vietnam, Laos, Cambodia and Thailand. It's also called the iridescent shark because of the luster displayed by juvenile members of the species. Though not a true shark, the fish resembles a shark and is now being farmed in Southeast Asian rivers.
The flesh of swai is white, flaky and sweet. The fish is considered endangered by the International Union for the Conservation of Nature.
