Boiling is the process through which water becomes steam, and at sea level, the boiling point of water is 212 degrees Fahrenheit. At different elevations, the boiling point of water could be lower or higher, as determined by the atmospheric pressure in that area.
High pressure constricts the ability of water to boil, so the higher the surrounding pressure, the higher the temperature required to boil water. At higher altitudes, where the pressure is lower, water boils at a lower temperature than it does at sea level. This is the reason for high-altitude cooking instructions found on the packages of many popular grocery items.
