Hereford cattle are an ancient breed believed to have descended from cattle brought to Roman Britain that bred with a common cattle breed in Wales. Henry Clay thought the breed would be an excellent way to improve existing beef breeding stock in the United States, and he made the first official importation in 1817 of a cow, heifer and a bull. Several importations occurred during the next century, and soon the breed became a common sight across the Midwest.
