Yeung Chow or Yangzhou fried rice is an egg fried rice dish. Meat and vegetables may also be added. Unlike other fried rice recipes, soy sauce is not an ingredient.
Yeung Chow rice is also usually prepared with leftover rice. The dish is named for General Yang Su, who liked to eat rice fried with egg. It is a staple dish in Yangzhou culture as well as a dish commonly eaten for special occasions. The dish is prepared by whipping and frying eggs, and then frying vegetables and cooking meat such as shrimp, chicken or beef before combining all of the ingredients in a wok with the rice.
