Ingredients:

• 1/2 cup vegetable shortening
• 1 cup brown sugar
• 1 teaspoon vanilla extract
• 1 egg
• 1 8-ounce can crushed pineapple, drained well
• 2 cups all-purpose flour
• 1/4 teaspoon baking soda
• 1 1/2 teaspoons baking powder
• 1/8 teaspoon salt

1. Grease a cookie sheet and preheat the oven to 325 F.
2. Cream the shortening and sugar together in a large bowl until light and fluffy.
3. Add in the egg and beat well to combine. Stir in the vanilla and pineapple.
4. In another bowl, combine the flour, baking soda, baking powder and salt. Once combined, slowly stir into the shortening mixture.
5. Drop by rounded teaspoon onto the greased baking sheet.
